Recipe - Morrocan Lamb Shanks
4 Lamb Shanks or 1kg Diced Lamb 2 tsp Harissa 2 tsp Morrocan Spice Mix 1 Tbs Flour (plus extra for dusting) 80mL Olive Oil 2 Brown Onions, Chopped 3 Garlic Cloves 1 Red Capsicum, chopped 2 tsp Sugar 1.5L Lamb or Beef Stock 1 peice preserved Lemon 400g Tomatoes, chopped Pinch Saffron in 2 Tbs water 250g Prunes Fresh Coriander for garish Preheat Oven to 180 degrees Celsius Dust shanks in flour, heart half the oil in flame proof casserole dish with lid. Brown Shanks, then remove. in remaining oil cook onion until golden, add garlic, spice mix, harissa cooking for 2 minutes. Add flour mixing for a minute then add stock, lemon, tomatoes and capsicum and bring to the boil. Put into oven and cook for 1 hour, add Saffron and water, cook for a further 30 minutes. You can cook longer if you like the meat falling off the bone. Add prunes for the last 5 minutes of cooking. Although we are not certified organic we run our farm sustainably are always looking towards alternative methods to raise our lambs in a stress free environment. Afterall, we want to live a heathly lifestyle and we want to preserve our family farm, for future generations.
